Three Bean Tomato Soup

Dear friend,

Christmas is over and I’m finally back to my kitchen. I know you’ve eaten a lot of stodge over the break so I’ve prepared this SUPER EASY, SUPER CHEAP, SUPER HEALTHY recipe to flush out your system (I was going to call this Poop Soup because beans are full of fibre which assists in frequent bowel movement). As this soup is so chunky, you can enjoy it alone or as an accompaniment. Anyway, let’s go…

(P.s. this recipe has a surprisingly long fridge life)

Bean ingredients

Portions: serves 4+ (depending on how you eat it)

Prep time: 10 mins                    Cook time: 25 mins                    Total time: 35 mins

What you will need:

  • A large saucepan
  • A large [chef’s] knife
  • A wooden or large spoon
  • A can opener

Ingredients:

  1. 2 tins of chopped tomatoes
  2. 1 tin of kidney beans
  3. 1 tin of chick peas
  4. 1 tin of butter beans
  5. 2 heaped tbsp butter
  6. 5 cloves garlic (finely chopped)
  7. 1 onion (sliced)
  8. large handful of fresh coriander (chopped)
  9. 3 heaped tsp curry powder
  10. 1 level tsp salt
  11. 1 level tsp black pepper

Let’s cook…

  1. Prepare onion and garlic, rinse all beans and chop coriander
  2. Place butter in saucepan and cook on medium/low heat
  3. Once butter has melted, add garlic and onion and cook for 3-5 minutes. Stir regularly
  4. Next, add both tins of tomato along with salt, pepper, curry powder and coriander. Increase heat to medium and cook for 5 minutes. Stir regularly
  5. After 5 minutes, stir in all beans and cook for 15 minutes. Soup done

Ways to enjoy this dish:

  • On it’s own
  • With fried eggs
  • With torilla chips
  • On toast
  • With rice
  • With fish
