Smoked Mackerel Rillettes

Dear friend,

This was on the specials menu at Côte once as a starter. I fell in love with it and decided to attempt it at home. It’s basically posh tuna. 

Portions: really depends on how you plan to eat it

Prep time: 10-15 mins                 Cook time: 0 mins               Total time: 10-15 mins

What you will need:

  • A microwavable bowl
  • A large [chef’s] knife
  • Knife and fork


  • 3 boneless smoked mackerel fillets
  • 3 heaped tbsp crème fraiche
  • 2 tbsp white wine (optional)
  • 1/8 onion (finely chopped)
  • a sprig* of rosemary (finely chopped)
  • a sprig of thyme (finely chopped)
  • pinch of black pepper

Let’s go…

  1. Place the mackerel in the bowl and then in the microwave for 30 seconds. This makes it easier to break up the fillets into smaller pieces
  2. Break up the fish using knife and fork
  3. Add all the listed ingredients to the bowl and mix until combined. Done

Ways to enjoy this dish:

  • With a baguette
  • With toasted bread
  • On a jacket potato
  • With carrot sticks (and other raw veg)
  • On canapés
