Green Tropics Smoothie

Dear friend,

If you’re like me, you’ll do anything to delay getting out of bed when you have to go to a 9 a.m. lecture. This includes making breakfast. I’m sure you’ve heard them say breakfast is the most important meal of the bla… It probably is, but tbh I don’t have time for that. What I do have time for, however, is a super quick smoothie every morning using frozen fruit. Here’s my favourite recipe…

Portions: serves 1

Prep time: 5 mins                        Cook time: 0 mins                       Total time: 5 mins

What you will need:

  • A blender
  • On-the-go smoothie cup

Ingredients:

  • 80g frozen mango chunks
  • 50g frozen pineapple chunks
  • 70g frozen ripe banana chunks (equivalent to one banana)
  • 40g spinach (one small handful)
  • 250-300ml coconut water (I suppose you could substitute for apple juice)
  • 1 tbsp natural syrup (optional for sweetness)

I’m not going to tell you how to make a smoothie haha! But I will say this…..

I prefer to use frozen fruit because its colder, thicker, less pulpy and it’s ready to be used. If your blender is strong enough, it can blend this recipe in one go. However, in an ordinary blender, it may need a bit of prodding. What can I say? I love a thick smoothie. You can always use fresh fruit it you’d prefer. That would definitely blend well in any blender

Shopping list (makes 4-6 smoothies):

  • Frozen mango chunks (500g), Tesco, £2
  • Frozen pineapple chunks (450g), Tesco, £2
  • Ripe Bananas, Tesco, £0.80 (I freeze these myself)
  • Spinach (200g), Tesco, £1.50
  • Coconut water 1L, Tesco, £2 depending on which one you get

You could also just freeze your own fruit.

    I’ve been looking for a smoothie recipe! Not a banana fan so I might leave it out or replace it…. but definitely going to test it out!
