30 Minute Chicken & Vegetable Soup

Dear friend,

I know it doesn’t seem like it, but summer is slowly creeping up on us and I know you’re trying to lose a couple pounds. The truth is, a little fat never hurt nobody. But let’s be honest; soup will always be better for you than pizza. So do yourself a favour and get to cooking 😀 xxx

chicken veg ingredients

Portions: serves 2-3

Prep time: 15 minute            Cook time: 3o mins            Total time: 30 mins (it makes more sense if you read on haha)

What you will need:

  • Medium saucepan
  • Large [chef’s] knife
  • Potato peeler
  • Fork
  • Wooden or plastic spoon


  • 2 chicken breasts
  • 500ml freshly boiled water
  • 1 leek (chopped)
  • 1 onion (chopped)
  • 1 large or 2 small carrots (chopped)
  • 1 potato (chopped)
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Let’s go…

  1. Cut each breast into 3 pieces. This makes it easier to cook
  2. Place saucepan on medium heat and add chicken, salt and boiled water. Cover and leave for 15 minutes
  3. While the chicken is boiling, prepare all veg (leek: remove and don’t use the first two layers because they usually trap dirt. Only use the green half. The white half is not as nice)
  4. Once 15 minutes has passed, using a fork, remove the chicken breasts from the water
  5. Add the veg and black pepper to the saucepan, then cover and leave for 10 minutes
  6. Using a fork, pull the chicken apart to make into smaller pieces
  7. Once 10 minutes has passed, add the chicken to the saucepan and cover for 5 more minutes. Recipe done

Feel free to add more salt, pepper or any other seasoning you like. This is just a basic recipe to which anyone can amend.

    Such a delicate soup, definitely going to use it as part of my new ‘healthy diet’ especially since I hate most vegetables.
