Eggs Three Ways

Dear friend,

Having eggs in the kitchen is so handy! They’re cheap, quick to make, and they basically go with everything. Here are 3 different ways I have my eggs.

What you will need:

  • Frying pan
  • Spatula
  • Bowl
  • Fork

Smoked Salmon & Scrambled Egg Muffin 

(soz for the poor quality photo)

Portions: serves 1

Prep time: 2 mins                           Cook time: 3 mins                                  Total time: 5 mins

Ingredients:

  • 2 eggs
  • 3 tbsp milk (I use semi-skimmed)
  • 1/4 tsp salt
  • pinch black pepper
  • 1 heaped tbsp butter
  • smoked salmon
  • muffin

Let’s go…

  1. Add butter to frying pan and place on low-medium heat
  2. Add eggs, milk, salt & pepper to a bowl and beat with a fork until all combined
  3. Slice muffins and place in toaster
  4. Once the butter has melted, pour egg mixture into frying pan
  5. Stir slowly with spatula for a few minutes
  6. They’re ready when they look like scrambled eggs haha! Voila!

Asparagus & Fried Egg

Portions: serves 1

Prep time: 0 mins                           Cook time: 4 mins                                  Total time: 4 mins

Ingredients:

  • 1 egg
  • 1 pack of asparagus tips (100g)
  • 1 tbsp butter
  • 1/4 tsp salt
  • 1/4 black pepper
  • 1/2 tsp oil (any)
  • 1 tbsp sweet chilli sauce

What next?…

  1. Add butter, salt and pepper to frying pan and place on medium-high heat
  2. Once butter has melted, add asparagus to the frying pan. Turn every minute for 4 minutes. It should be slightly browned. Once ready, turn heat off and set aside.
  3. Rub oil and sweet chilli on the bottom of a bowl
  4. Crack egg into the bowl and microwave for 50 seconds. If you prefer your yolk harder, microwave for another 10 seconds. Repeat until you’re satisfied.

Sardine & Veg Omelette

Portions: serves 2

Prep time: 8 mins                           Cook time: 10 mins                                  Total time: 18 mins

Ingredients:

  • 3 eggs
  • 1 tin sardines (135g)
  • 1 salad tomato (chopped)
  • 1/2 onion (sliced)
  • 1/2 pepper (chopped)
  • 1 tbsp butter x 2
  • 1/2 tsp salt x 2
  • 1/4 tsp black pepper x 2

Cooking time…

  1. Prepare all veg
  2. Add 1 tbsp butter to frying pan and place on medium heat
  3. Once butter has melted, add sardines, veg, salt and pepper. Stir occasionally for 7 minutes and then remove from frying pan
  4. Add 1 tbsp butter to frying pan
  5. Place eggs, salt and pepper in a bowl and beat with a fork until combined
  6. Once butter has melted, pour egg mixture into frying pan.
  7. After 2 minute, TRY to flip it over lol. Cook for 1 minute, it should now be ready.
