Spicy Chorizo and Sweet Potato Soup

I can’t lie, this recipe isn’t actually mine- it’s from a guy called Rob. But I’ve changed it a little so I’m claiming it as mine. This. Soup. Bangs. And is so perfect for the autumn/winter season. Check it out…

Prep time: 15 mins                            Cook time: 30 mins                            Total time: 45-50 mins

Portions: Serves 2-3

What you will need:

  • Deep frying pan/wok
  • Chef’s knife/vegetable knife
  • Potato peeler
  • Blender

Ingredients:

  • 2 heaped tbsp butter
  • 200g chorizo (chopped)
  • 2 medium sweet potatoes (chopped)
  • 2 medium carrots (chopped)
  • 2 chillies (chopped with seeds)
  • 1 red onion (sliced)
  • 700ml + 200ml boiled water
  • 7 tbsp single cream
  • 1/2 tsp salt

What to do…

  1. Prepare all ingredients
  2. Add butter to wok and place on medium-high heat
  3. Once butter starts to bubble, add all the solid ingredients along with salt and stir occasionally for 15 minutes
  4. After 15 minutes, add boiled water (700ml), reduce heat to low and leave for another 15 minutes
  5. Once 15 minutes has passed, transfer contents of wok into a blender along with boiled water (200ml) and cream (blending hot soup can be dangerous. Check link for how to blend hot soup). Voila!
