Three Vegetable Sides

Dear friend,

As students, we all have a big appetite but not always a full plate. Sometimes that chicken kiev or slab of steak isn’t enough to eat by itself. And sometimes, salad and boiled carrots just won’t cut it. Here are 3 cheap but tasty sides you won’t believe you can make at home, featuring; Garlic & Herb Sweet Potato Fries, Butter Fried Broccoli, and Thanksgiving-Style Mash.

Garlic & Herb Sweet Potato Fries

Prep time: 5 mins                              Cook time: 40 mins                                 Total time: 45 mins

Portions: serves 2

What you will need:

  • Chef’s knife (large knife)
  • Potato peeler (optional)
  • Oven tray
  • Foil (optional)

Ingredients:

  • 1 large sweet potato
  • 2 tbsp garlic infused oil
  • 1 tbsp mixed herbs
  • A pinch of salt (optional)

What to do…

  1. Preheat the oven to 180°C/gas 4
  2. Peel sweet potato (or don’t) and cut into chip size chunks
  3. Line tray with foil (or don’t) and place sweet potato fries on it
  4. Pour oil and mixed herbs onto the fries and mix with hands or forks so all fries are evenly covered (add salt if you want)
  5. Place in oven for 40 minutes and voila! Chips done

 

Butter Fried Broccoli

Prep time: 3 mins                              Cook time: 7 mins                                 Total time: 10 mins

Portions: serves 2

What you will need:

  • Chef’s knife (large knife)
  • Frying pan

Ingredients:

  • 1 brocolli head
  • 30g (2 tbsp) salted butter (and I mean butter not margarine)
  • 1/2 tsp salt
  • pinch of black pepper
  • 1 tbsp water (any temperature)

What to do…

  1. Cut stem off broccoli
  2. Separate the florets and then slice in half (just copy the picture)
  3. Place frying pan on a high heat and add butter, salt and pepper
  4. Once the butter starts to bubble, add broccoli pieces flat side down, add water, and leave for 2-3 minutes
  5. After 3 minutes, the broccoli should be slightly brown (like in the picture). If so, turn over and leave for a further 2-3 minutes. Voila!

Thanksgiving-Style Mash

Prep time: 2 mins                              Cook time: 15 mins                                 Total time: 20 mins

Portions: serves 2

What you will need:

  • Potato peeler
  • Chef’s knife (large knife)
  • Potato masher or electric whisk
  • Medium saucepan

Ingredients:

  • 3 medium baking potatoes
  • 500ml boiled water
  • 1 tbsp salt (optional)
  • 100g cream cheese
  • 2 tbsp (30g) salted butter
  • pinch of ground white pepper

What to do…

  1. Boil water
  2. Peel and quarter the potatoes
  3. Place saucepan on medium heat then add boiled water, potatoes and salt. Leave for 15 mins or until soft
  4. Drain potatoes and place back into saucepan (off the hob) with cream cheese, butter and ground pepper. Mash/whisk until smooth. Taste and add more salt/pepper to your preference
  5. Place back on low heat and stir for 2 minutes to reheat. Serve immediately

And there you have it 🙂 3 easy vegetable sides.

    Tried the broccoli recipe (happened to have it in my fridge) and LOVEEED it. Gave some to my housemates as well and we all enjoyed it together. Simple but SO tasty.
