Dear friend, I must say, this recipe is a bit of a catch with my vegan friends – shout out Holly and Liv (the only vegans I know). I came up with it a few years back when I was on The Daniel Fast. I was surprised at how good it was and so have been eating it ever since. I tend to add spinach to it once the onions have cooked, but tbh, what student can afford spinach? Dear friend, Don’t hate me looool – I know porridge is the easiest thing in the world to make. I just wanted to show you 2 things I added to mine to take it from a 2/10 breakfast to a solid 10. Bare in mind I don’t really like coconut or peanut butter, I was so surprised at how addicted to this I got. At one point, I was eating porridge twice a day and was buying a new pot of this butter every fortnight! We all like our porridge consistency different (some don’t like it at all LOL) but I’ll note the oat : milk ratio I use just so you can see how I make mine. P.s. I never eat fruit with my porridge, this was purely for show loool.

Dear friend, As well as being a popular herb for a creamy onion dip (eew btw), chives go crazily well with prawns! This recipe came to mind when I was craving prawn & chive dumplings, but knew that living in Ormskirk, I was never going to find them. With such short prep/cooking times and a swell ingredient combo, this recipe really is gold. Winner winner prawn dinner!

Dear Friend, It’s been a mad, MAD year. I went from working full time whilst completing my final year of uni, to working 66 hours a week (excessive, I know), to redoing my whole bedroom, to now. I won’t bore you with the details but I am pleased to say I’m back and I’m not leaving for a while baby! A bit about the smoothie…..this is basically what I drank everyday for months, and there are only 3 ingredients in it. Figured I’d give you something easy and nutritious to get you back into the cooking life. P.s. my aim is to include some sort of video in every post – but we’ll see how that goes lol!
